4 wedges of Lemon

Steps for Black Bean Soup with Bacon

Peel and chop the Vegetables

Peel and chop the onion, the garlic, coarsely chop the carrot and the celery.

Prepare the Parsley

Rinse sprigs of parsley with cool water, and pat dry with a paper towel. Chop enough parsley leaves into small pieces on a cutting board using a knife ( to measure about 2 tablespoons ), or place the leafy portion of the parsley in a small bowl or cup and snip into very small pieces with kitchen scissors. Discard the stems.

Prepare the Bacon

Cut bacon slice crosswise into 1/2-inch strips. Cook the bacon strips in the saucepan over medium heat 1 minute, stirring constantly. Do not drain.

Mix the Bacon, onion and garlic

Add the onion and garlic to the bacon. Cook about 5 minutes, stirring frequently, until onion is tender when pierced with a fork and beginning to turn yellow. Bacon will still be soft. Remove the saucepan from the heat.

Stir in the rest of Vegetables

Stir in the chicken broth, carrot, celery, parsley, oregano, and the red pepper. Heat to boiling over high heat. Once the mixture is boiling, reduce heat just enough so mixture bubbles gently. Cover and cook 10 minutes.

Prepare the Black Beans for the soup

While broth mixture is cooking, drain the black beans in a strainer, and rinse with cool water.

Mash 1/2 cup of black beans with a fork

Measure out 1/2 cup of the black beans. Place the 1/2 cup beans in a small bowl, and mash them with a fork.

Add the Black Beans to the soup mixture

Stir the whole beans and the mashed beans into the broth mixture. Cook about 1 minute or until beans are heated. Serve soup with lemon wedges.

We all hear about broccoli soup, vegetable soup, chicken soup, and so on, but this soup with black beans isn’t as popular as it should be. If you have done it before, bravo! If not, try it at least once to make an opinion. I have tried a lot of different variations of this dish, but I wrote here the perfect combination of ingredients in this recipe.

Trust me, I have tried a lot of combinations, spices, and ingredients. But the winner for this “contest” is this recipe you read right now. Let me know if you like it! This healthy dish is easy to make with canned beans. Thanks to some basic aromatics and spices we all have in our kitchen, makes this soup is easy to prepare and cheap. As essential equipment, you only need a medium or large saucepan (2 or 3-quart size).

 

 

 

Creamy texture for Black Beans Soup

To achieve the perfect creamy texture, pure a portion of the soup in the blender until it’s super creamy, then stir it back into the pot. The result is tender beans and a lightly creamy consistency. This isn’t a must-have design, but some of my users prefer this kind of texture instead of the traditional one. If you want more consistency, you can pour as many portions as you like into the blender.

 

 

 

Can I refrigerate or freeze the Black Bean Soup with Bacon?

You can place the leftovers in the refrigerator and they will keep well for four to five days. If you want to keep it over five days, the other option is to freeze it in plastic bags. You can keep it in your freezer for up to two months, but I recommend only one month and a half. Other cooks say that the Black Bean Soup with Bacon can be frozen for up to three months, but I doubt you will feel the same flavor. I think you’ll know better than other cooks or myself.

 

 

 

Turn this soup into a Vegan dish

To turn the black bean with bacon soup into a vegan dish, you only need to set the bacon aside and use my special recipe for homemade vegetable broth instead of chicken broth. These two are the only ingredients that need to be changed. Moreover, you can also add some mushrooms to have a better consistency.

 

 

 

Black bean soup is great for weight-loss diets

You can include this soup in your meal plan with ease. Besides the fact you’ll have a great soup, it is also great for a weight-loss diet with only 147 calories per serving. Also, the black beans will make you feel full longer. If you want fewer calories, don’t use bacon and change the chicken broth to a vegetable one. Unfortunately, this will change the taste.

 

 

 

Some tips you should know

  1. To make this a meatless soup, substitute 1 tablespoon of vegetable oil for the bacon, and use vegetable broth instead of chicken broth.
  2. The bacon will be easier to cut up if you place it in the freezer for 5 minutes first.
  3. Before adding the chicken broth, remove the saucepan containing the hot bacon fat and onion from the heat to prevent spattering and steam.
