Prepare the Carrots

Peel the carrots. Heat 1-inch of water until it is boiling. Add the 1/4 teaspoon salt if desired (or add to taste). Add the carrot, cover, and heat to boiling again. Reduce heat just enough so the water bubbles gently. Cook covered 12 to 15 minutes or until carrots are tender when pierced with a fork.

Prepare the Glaze

While carrots are cooking, heat the brown sugar, butter (or Margarine), orange peel, and 1/2 teaspoon salt in the skillet over medium heat, stirring constantly, until sugar is dissolved and the mixture is bubbly. Be careful not to overcook or the mixture will taste scorched. Remove the skillet from the heat.

Mix the all and the result - Brown Sugar Glazed Carrots

Drain carrots in a strainer, then stir them into the brown sugar mixture. Cook over low heat about 5 minutes, stirring occasionally and gently until carrots are glazed and hot.

About Sugar Glazed Carrots

Two years ago, I wanted to prepare a different meal (besides turkey – that one I kept), and one of the sides was these sugar-glazed carrots, a side dish I will indeed prepare it again soon, very soon. (Update: I prepared it today, yummy.)

You can use carrots or baby carrots, margarine or butter, sugar, orange peel, and salt. You can even try to combine these ingredients differently to have a slightly different taste every time. For example, I like butter and baby carrots, but if you like margarine more, use it instead of butter. Or, if you want to use regular carrots, in this recipe can be used about 7 medium ones (normal, not baby). As for the sugar, the brown one is way better for glazing than the white one. But again, use what you have or like.

 

 

 

Sugar Glazed Carrots? That’s it?

Well, this recipe can also be called Brown Sugar Glazed Carrots. Yeah, I’ve added only one word. But it still remains awesome :p. The brown sugar and butter mixture creates a sweet and beautiful glaze, and is one of my most-requested holiday side dishes. We all have carrots and butter (or margarine) in our freezer, sugar in our kitchen cabinet, and a lot of joy when preparing a sweet side dish like this. 

I don’t know if you are aware, but these glazed carrots resemble a lot with Chinese sweet carrots. When I first made this recipe, the carrots were a bit uncooked, but the second time I made it, I was like a Pro!

Carrots have beta-carotene, vitamins, minerals, and antioxidants. This awesome veggie will boost your immune system, offer great minerals, and will make your hair look stronger, thicker, and shinier. Also, because I talked about stronger hair benefits, the carrots are great for your skin, adding a glowing shine to it (+protect the skin from the Sun), preventing wrinkles, and protecting your teeth. Carrots are an excellent source of vitamin A in the form of beta-carotene. They are also a good source of several B-vitamins, vitamin K, and potassium, which are a great source of many plant compounds, especially carotenoids, such as beta-carotene and lutein. 

This awesome veggie offers a reduced risk of cancer and heart disease, and improved eye health. They may be a valuable component of an effective weight loss diet.

 

 

 

Weight-Loss properties

One of the reasons to include carrots in your diet is because of its weight-loss properties. While it is best to have carrots raw, juicing carrots is also a good bet for effective weight loss. Preparing sugar-glazed carrots is a great idea also. 

Carrots are packed with vitamins, especially vitamin A. Our body converts vitamin A from food into chemicals called retinoids, which interact with our fat cells, and influence new fat cell growth, fat storage and obesity, according to a study published in Archives of Biochemistry and Biophysics. The study found that vitamin A may help in reducing abdominal obesity or belly fat, which has a few serious health risks.”
