The History of Roast Potatoes
The Inca Indians (Peru) were the first to cultivate potatoes (8,000 BC to 5,000 B.C). Notes and Tips
- Essential Equipment: baking pan, such as 8- or 9-inch square or 13 × 9-inch rectangle pan.
- Most small red potatoes are about 2 inches in diameter. If they are much bigger, cut them in half so they will roast more quickly.
- Leftover roasted potatoes can be cut into pieces and panfried for quickly fried potatoes. To panfry, cook potato pieces in a small amount of oil over medium heat, occasionally stirring, until hot.
