Steps for Best Roasted Red Potatoes

Prepare the red potatoes

Heat the oven to 350º. Scrub the red potatoes thoroughly with a vegetable brush to remove all the dirt.

Prepare the green onions

Peel and slice the green onions.

Coat the red potatoes with oil

Place the potatoes in the ungreased pan. Drizzle the oil over the potatoes, and turn potatoes so all sides are coated.

Sprinkle the onions and rosemary over the potatoes, and stir the potatoes.

Place into the oven and roast them

Bake uncovered about 1 hour 15 minutes, stirring occasionally until the red potatoes are tender when pierced with a fork.

Roasted Red potatoes are the simplest side dish with any type of meat (french fries are also simple, but not with so many benefits). Whether you are cooking fish, turkey, pork, chicken, or beef, adding roasted potatoes as side dish makes your final dish award-winning.

Potato is considered a basic food ingredient because it cannot be absent in any cuisine of the world. Roast potatoes can be served as an individual preparation along with cheese, mozzarella, or a salad. Easy to prepare (some devices help you peel potatoes easily), potato-based recipes are the most used for side dishes. When shopping, search for medium-large red potatoes and make sure to examine each one of them.

The History of Roast Potatoes

The Inca Indians (Peru) were the first to cultivate potatoes (8,000 BC to 5,000 B.C). In 1536, Spanish Conquistadors conquered Peru, were impressed by the flavor of the potatoes, and brought the vegetable back to Europe. In October 1995, the potato became the first vegetable to be grown in space. NASA and the University of Wisconsin, Madison, created the technology with the goal of feeding astronauts on long space voyages, and, eventually, feeding future space colonies.

 

According to happycow.net, in the mid-19th century, roasted potatoes were sold on the streets by hawkers during the autumn and winter months. In London, it was estimated that some 10 tons of baked potatoes were sold each day by this method.

 

Notes and Tips

  1. Essential Equipment: baking pan, such as 8- or 9-inch square or 13 × 9-inch rectangle pan.
  2. Most small red potatoes are about 2 inches in diameter. If they are much bigger, cut them in half so they will roast more quickly.
  3. Leftover roasted potatoes can be cut into pieces and panfried for quickly fried potatoes. To panfry, cook potato pieces in a small amount of oil over medium heat, occasionally stirring, until hot.
