Spread the sour cream over the beans, leaving about a 1-inch border of beans around the edge. Spread the guacamole over the sour cream, leaving a border of sour cream showing.

Finish the Mexican Food Platter

Sprinkle the cheese over the guacamole. Peel and chop the green onions and sprinkle over the cheese. Design the dish with Tortilla chips, and place the rest in a serving bowl. Cover with plastic wrap and refrigerate until serving time. Enjoy!

About the Mexican Food Platter

I’m not a great supporter of platters, maybe I’m old school, but a lot of users emailed me to make some recipes with this kind of dishes. A lot of platter recipes are already on the internet, and I wanted to do something different than traditional recipes. Therefore, I have made this simple, but tasty Mexican platter to tickle your taste buds. You only need to decide what sauce to use: salsa, chili or ketchup. I was saying above that I made the platter for my friends, and they were delighted by my choice. This dish is for 4-5 persons, but if the persons are like my friends, only 2 of them finished one. Therefore, think about your friends’ tastes, and if they like Mexican food, adjust more servings from the ingredient list of this recipe and make more Mexican Food platters.

 

 

What is so special about this Mexican Platter?

I don’t really see something special at a platter recipe, but it has its “bonuses”. It can be prepared very fast, without fuss, and is tasty. Depending on what ingredients you combine, the Mexican platter has the spiciness needed to differentiate from other same-kind of dishes. I balanced the ingredients as perfectly as I could, just to make sure it can be great for any taste. It delivers a special flavor and will make your taste buds crave for more.. and a lot of water ..

 

 

Why Pinto Beans?

Few foods are as versatile as pinto beans. They can be served as appetizers, soups, salads, main dishes, and bread. Even some cake, pie, and candy recipes use cooked pinto beans.

Pinto beans are a good source of protein, fiber, micronutrients, antioxidants, iron, potassium, magnesium, calcium, phosphorus, and the B vitamins folate, thiamin, riboflavin, and niacin. One-half cup of cooked pinto beans provides 118 calories. Beans are good for low-sodium diets since they contain only the salt added by the cook. Beans are naturally low-fat and provide 5 grams of fiber in a 1/2-cup serving.

You can easily store dried beans in tightly covered containers in a dry, cool place; they will keep for several months when stored under these conditions.

 

 

Can I refrigerate it?

I got this question a few times, and I updated this recipe. Well, yes, you can. BUT! I do not recommend to keep it for more than 24 hours in your refrigerator. It is best to make it on spot. Just prepare the ingredients with 2-3 hours ahead, and combine them when your guests arrive.

 

 

Notes and Tips

  1. Essential Equipment: 12- or 13-inch round serving plate or pizza pan.
  2. Purchase guacamole in the dairy section of the supermarket. It may be called “avocado dip”… it’s the same thing!
  3. For a hotter flavor, use a flavored shredded cheese, such as pizza or nacho, instead of plain Cheddar.
