Prepare the Mixture

First, you need to sauté the garlic and onion in olive oil. Add cumin, Liquid Aminos and blend well. Add water and split peas, bring to a boil and
simmer for 2 minutes. Remove from heat, cover, and let it sit for 1 hour.

Add the carrots, potatoes, cumin and simmer covered, over low heat for about 2 hours.

Remove from heat and enjoy

Why Vegan recipe for Split Pea Soup? Because it’s easier for vegetarians or meat-eaters to find a recipe for this kind of dish. But vegans find or cook the same recipes all the time, with only different titles and not more… Due to the fact I respect all diet types, I remembered how my grandma always loved to eat healthy (she embraced the vegan style of living) and was telling us (when I was a kid) why this is important. A few days ago I found her notes (recipes are written in a notebook) standing in my kitchen, hidden from my children to not ruin it. The first recipe was this one, the vegan split pea soup which I loved when I was a kid (yes, I ate my vegetables). I prepared it step by step and the result needed a bit of modern touch, therefore I started to change the ingredients’ amount and added cumin in addition. As you can find a lot of “ham split pea soup” recipes on the internet, I wanted to keep it simple, and in her memory, keep it vegan. It took me 2 days until I’ve achieved the perfect recipe for split pea soup, being the tastiest of all.

 

 

What are split peas?

Split peas are dried field peas, half-splits, peeled and prepared for cooking. This kind of veggie comes in both yellow and green varieties. I used green split peas in this recipe due to the sweeter taste (yellow ones have milder taste). You’ll often see yellow split peas used in curry recipes. 

 

 

What is the difference between split peas and whole peas in soup?

The difference between whole peas and split peas is the final result of the soup. Whole peas will take longer to cook than split peas, but they won’t break apart, remaining mostly intact. Split peas will break apart if you want a thick or creamy soup.

 

 

Are split peas Healthy?

This veggie has great nutritional and health benefits. Low in fat, great fiber intake, good protein compounds, a good source of vitamins & minerals (including Vitamins A, B, and magnesium), the split peas are great for use in stews or soups.

 

 

 

How long can you store the Split peas Soup?

After making it, the split peas soup can be stored in the refrigerator for up to 3-4 days. If you want to store it more, you can freeze it and store it for a maximum of 2 months. Some say it can be stored for 3 months but I disagree. After 2 months it loses the healthy properties and the taste is changing, therefore, not more than 2 months.

 

 

What goes well with vegan split pea soup?

To “spice” things up, and keeping veganism in mind, the split pea soup goes very well with garlic croutons. There’s no better love than a thick soup and croutons! I never eat this kind of dishes without ’em. Another good garnish for a vegan or vegetarian soup would be some whole peas, freshly chopped mint, or some fiery lime pickle.
